1/4 cup (60 mL) olive or vegetable oil
 
1 large onion, finely chopped
 
1 garlic clove, finely chopped
 
1 28-oz (796 mL) can tomatoes or 6 fresh tomatoes, peeled and diced
 
1 5 1/2 oz (156 mL) can tomato paste
 
1 bay leaf
 
1/2 tsp (2 mL) thyme
 
1 tsp (5 mL) basil or oregano
 
2 tsp (10 mL) sugar

Directions

€¢ Place the oil of your choice in a large microwave-safe dish, the ideal size being 6 cups (1.5 mL).
€¢ Microwave at HIGH 2 minutes.
€¢ Add the onion and garlic. Stir until well coated with the oil.
€¢ Microwave 4 minutes at MEDIUM-HIGH, stirring once. The onion should be tender but not browned.
€¢ Add the remaining ingredients. Stir to mix well.
€¢ Microwave 8 to 10 minutes at MEDIUM-HIGH, stirring after 5 minutes of cooking.
€¢ There is enough sauce to serve with 8 ounces (250 g) of cooked pasta of your choice.
