Pasta, Egg, and Salmon Salad Recipe
Ingredients
| 2 cups of small elbow macaroni, cooked al dente, drained, and cooled | ||
| Salmon | 1 Ounce, drained, flaked | |
| 3 tender celery ribs, scraped, finely chopped | ||
| 4 hard-cooked eggs, chopped | ||
| Salt | 1 Teaspoon | |
| Pepper | 1/2 Teaspoon | |
| Mayonnaise | 3/4 Cup (16 tbs) | |
| Dijon Mustard | 1/2 Teaspoon | |
| 6 large, crisp Boston lettuce leaves | ||
| 6 stuffed green olives, halved | ||
| Pimento strip | 6 | |
Directions
In a bowl, thoroughly blend the pasta, salmon, celery, eggs, salt, pepper, mayonnaise, and mustard.
Taste for seasoning.
Chill.
Place on lettuce leaves and top with the olives and pimento strips.
