Pasta E Fagioli With Basil Recipe
I very well knew that I gotta use basil as the culinary herb if I have an Italian cuisine in mind, but, only after trying this Pasta E Fagioli With Basil did I know that it would be soo tasty. Ingredients
Olive oil spray
1 medium onion, chopped
4 cloves garlic, chopped
1/2 lb (230 g) mushrooms, sliced
1 red bell pepper, chopped
2 stalks celery, sliced
2 14 1/2-oz cans (870 g) low-sodium ready-cut tomatoes with juice
2 15-oz cans (900 g) cannellini, red kidney or great northern beans, rinsed and drained
1/2 lb (230 g) spinach leaves, coarsely chopped
1 pkg Fresh Basil, chopped, some for garnish
Salt, to taste
Pepper, to taste
1 lb (455 g) ziti, cooked al dente grated Parmesan cheese, optional
Directions
Coat a nonstick skillet with olive oil cooking spray.
Saute onion, garlic, mushrooms, bell pepper and celery for 5 minutes, or until soft.
Reduce heat and add tomatoes with juice, and beans.
Add water (optional) to reach desired consistency.
Cover and simmer for 15 minutes.
Add spinach, basil, salt and pepper.
Simmer 15 more minutes.
Saute onion, garlic, mushrooms, bell pepper and celery for 5 minutes, or until soft.

Add water (optional) to reach desired consistency.
