1 pound dried cranberry beans
 
6 or more cups bouillon
 
1 piece ham bone or 1 pound ham hock
 
1 onion, chopped
 
1 cup sliced celery
 
1/2 carrot, chopped
 
1 tomato, peeled and chopped, or 1/3 cup canned tomatoes
 
Salt and freshly ground black pepper
 
1 cup raw spaghetti, broken into 1 inch pieces and cooked

Directions

1. Boil the beans in the bouillon two minutes. Cover and let stand at least two hours.
2. Add the bone, onion, celery, carrot and tomato and simmer, uncovered, one hour. Season with salt and pepper.
3. Continue cooking the mixture until the beans are tender, or about one hour longer. Remove the ham bone or ham hock. Rub about half the beans through a sieve or put through a food mill. Return to the pot. Adjust the seasonings and reheat.
