Pasta and Potatoes Recipe
Here's an excellent Pasta And Potatoes recipe that you can easily prepare at home. This recipe makes an excellent main dish and the ingredients used, give it an exceptional flavor. Ingredients
Large onion - 1, finely chopped
Green chili pepper - 1, seeds removed, finely chopped
Medium sized potatoes - 4
Large ripe tomatoes - 2
Oregano
Chicken stock - 1/2 cup
Large pasta shapes - 1/2 lb
Extra virgin olive oil - 1/2 cup
Salt
Pepper
Garnish with:
Sprigs of basil
Additional diced ripe tomato flesh - 6 tbsp
Directions
MAKING
1 In a large pan, bring salted water to a boil.
2 Add in the pasta and cook.
3 In a wide, deep fireproof casserole dish, heat 1/2 cup of the oil.
4 Sweat the onion and chili pepper over a low heat for 10 minutes, stirring frequently.
5 Add the diced potatoes and continue to cook over low heat while stirring for 5 minutes.
6 Chop the tomato flesh coarsely and stir into the saucepan with a generous pinch each of oregano, salt, and freshly ground pepper.
7 Stir all the ingredients while cooking for 2-3 minutes.
8 Add the stock and stir again.
9 Cover and simmer for 5 minutes.
10 Add more salt to taste.
11 Remove from the heat.
12 When the pasta is barely tender and still crisp, drain, reserving about 1 cup of the cooking water.
13 Add the pasta to the contents of the saucepan and stir over low heat for about 5 minutes.
14 Add some of the reserved cooking water if required.
15 Remove from the heat and allow to stand, uncovered, for 10 minutes.
SERVING
16 Transfer to heated bowls and serve.
