Ingredients
2 cups sliced cauliflower florets, lightly steamed
1 1/2 cups sesame whole wheat pasta spirals, cooked until al dente
3/4 cup shredded sharp Cheddar cheese
2 eggs, beaten
3/4 cup low-fat cottage cheese
1/4 cup skim milk
2 tablespoons wheat germ
1 tablespoon grated Parmesan cheese
Dash of paprika
Directions
In a 2-quart ovenproof casserole, layer one-third of the cauliflower, one-third of the pasta, and one-third of the Cheddar.
Repeat the layering twice.
Place the eggs, cottage cheese, and milk in a blender.
Process on low to medium speed until smooth.
Pour over the layered pasta mixture, using a spoon to help the sauce reach the bottom of the casserole in several places.
Top with the wheat germ, Parmesan, and paprika.
Bake at 375° for 35 minutes or until the top is golden brown.
