Passion Fruit Fool Recipe
Ingredients
6 ripe passion fruit
150 ml (1/4 pint) skimmed milk
2 teaspoons corn flour
2 tablespoons water
150 ml (1/4 pint) plain unsweetened yogurt
1 tablespoon clear honey
Directions
1. Halve the passion fruit and scoop out the pulp into a bowl; discard the skins.
2. Gently heat the skimmed milk. Blend the corn flour and water to a smooth paste; stir in the hot milk, return to the pan, and stir over the heat until the sauce has thickened. Remove from the heat and cool slightly.
3. Stir the yogurt and honey into the sauce and leave until quite cold.
4. Combine the sauce and passion fruit pulp. Spoon into serving dishes and chill for 3-4 hours.
