Passion Fruit Cream Dessert Recipe
Ingredients
4 egg yolks
1/2 cup (125 ml) sugar
1 cup (250 ml) boiled milk, tepid
1 tbsp (15 ml) rum
4 passion fruits
3 tbsp (45 ml) heavy cream
Directions
Place egg yolks and sugar in stainless steel bowl; beat together with electric beater until mixture forms ribbons.
Mix in milk until well incorporated.
Stir in rum and set bowl over saucepan half-filled with hot water.
Cook over medium heat while stirring constantly with wooden spoon.
Do not boil.
When cream coats the back of the spoon, remove bowl from saucepan and set aside to cool.
Slice passion fruits in half, widthwise.
Using spoon, scoop out pulp and seeds and place in blender.
Add heavy cream and blend at medium speed for 1 minute.
