Directions
GETTING READY
1. In a large bowl, prepare the frosting by mixing the cream cheese, lemon juice and icing sugar together
2. The mixture should be smooth and pliable and the flavors should be blended.
3. Set aside to chill till required
4. Grease and line a 23 cm (9 inch) microwave ring mould with baking parchment or greaseproof paper.
MAKING
5. In a large mixing bowl, tip in the eggs, sugar, oil and the vanilla essence
6. Mix this well until you have a smooth yellow mix
7. Add the carrot to the mix and mix well again
8. Sieve the dry ingredients
9. Add the dry ingredients to the wet mixture and mix well
10. Do not over mix but make sure that the dry ingredients are mixed well
11. Spoon this mixture into the prepared ring mould
12. Cover with baking parchment and microwave on HIGH for 8 minutes till done
13. Rotate the dish during the cooking process every four minutes to ensure that it cooks evenly
14. Leave to stand for five minutes
FINALIZING
15. Allow the cake to cool before frosting with the prepared frosting using a palette knife.
16. Decorate with the halved passion fruit and spoon the pulp over the prepared frosting

17. Serve as-is
