Pashka Recipe
Ingredients
2/3 cup milk
1 envelope unflavored gelatin
3 cups ricotta cheese
1/3 cup honey
1/2 cup diced dried papaya
1/2 cup chopped dates
1/2 cup chopped pistachio nuts
Directions
Pour milk into top of a double boiler.
Sprinkle gelatin on top, and let stand for a few minutes to soften.
Set over hot water, and warm mixture until gelatin is completely dissolved.
In a large bowl, beat together ricotta and honey until blended and smooth.
Fold in gelatin mixture, then papaya, dates, and nuts.
Spoon into a lightly oiled 1- or 1 1/2-quart mold, and chill until firm.
