Paruppu Usili Recipe

This is a very famous south indian side dish. All vegans luv this dish for its taste & nutritional value..In Tamil "paruppu" means "dal/lentils" and "usili" means "Broken Crumbles". Hence named it as 'lentil crumbled veggie curry'.This can also be prepared with other vegetables like cluster beans, string beans, snake gourd, banana flower.. can also be tried with broccoli, cauliflower, asparagus .....

Recipe Story

My all time fav recipe that i luv to have with rice & rasam or mor kozhambu, which are the simple curries of south India.

Ingredients

 
Shredded carrot 250 gms
 
chopped Onion 1/4 cup
 
Mustard 1 tsp
 
urad dal 1 tsp
 
Turmeric pwd 1 tsp
 
curry leaves 4 nos
 
oil 4 tsp
 
channa dal/Bengal Gram 1/2 cup
 
Saunf 2 - 3 tsp
 
Red chilli 3 nos
 
Ginger Garlic paste 2 spns
 
Soak channa dal for 1/2 an hour

Directions

1.Heat 1 1/2 tsp oil splutter mustard seeds, Urad dal, curry leaves & saute onions till transparent
2.Now add the shredded carrot & mix well adding little salt.
3.Once it leaves out water add little more water for the carrot cook.
4.Keep this aside.
5.Grind soaked channa dal, saunf, red chillie, ginger garlic paste
6.Heat the remaining oil & add this ground channa dal mix sprinkling some more salt to taste
7.Fry it till the channa dal becomes brown & scramble it well till it gets separated
8.Now add the carrot mixture to this & mix it well
9.Garnish with coriander leaves
