| 3 or 4 cans (41/2 ounces each) medium shrimp, rinsed, drained, and deveined, or use | ||
| 11/2 to 2 pounds fresh shrimp, shelled cleaned and cooked | ||
Directions
Saute onion in 1/4 cup butter for about 5 minutes. Add chopped pepper and celery, and cook until softened but not brown. Make a white sauce of the 2 tablespoons butter, flour, milk, and salt. Combine with mayonnaise and mushroom soup, and then add onion-pepper mixture. Stir in the rice. Add cheese, then the shrimp. Mix well and place in a casserole. Bake for 30 to 45 minutes, until hot and bubbly and lightly browned.
