 Onion6 Tablespoon, finley minced
 Butter1/4 Cup (16 tbs)
 Green pepper1 To taste, chopped
 Celery2 Cup (16 tbs), chopped
 Butter/Margarine2 Tablespoon
 Flour2 Tablespoon
 Milk1 Cup (16 tbs)
 Salt1/4 Teaspoon
 Mayonnaise1 Cup (16 tbs)
 Chicken cream of mushroom soup1 Can (10oz)
 1 cup rice, cooked and cooled
 Cheese1 1/2 Cup (16 tbs), grated
 3 or 4 cans (41/2 ounces each) medium shrimp, rinsed, drained, and deveined, or use
 11/2 to 2 pounds fresh shrimp, shelled cleaned and cooked

Directions

Saute onion in 1/4 cup butter for about 5 minutes. Add chopped pepper and celery, and cook until softened but not brown. Make a white sauce of the 2 tablespoons butter, flour, milk, and salt. Combine with mayonnaise and mushroom soup, and then add onion-pepper mixture. Stir in the rice. Add cheese, then the shrimp. Mix well and place in a casserole. Bake for 30 to 45 minutes, until hot and bubbly and lightly browned.

susan i only add the shrimp uncooked just before adding the lemons on the top and running in the oven. the less rhey are cooked, the better lol barb
