Party Relish Tray Recipe

Ingredients

 
1/3 cup vinegar
 
1/4 cup salad oil
 
2 tablespoons lemon juice
 
2 teaspoons sugar
 
8 ounces whole mushrooms
 
2 cups cauliflower flowerets
 
3 medium carrots, cut into sticks
 
Assorted greens

Directions

For marinade, in a medium mixing bowl combine vinegar, salad oil, lemon juice, and sugar.
Add mushrooms, cauliflower, and carrots.
Toss to coat.
Place in a plastic bag in a bowl.
Seal tightly.
Let stand for 1 hour at room temperature or several hours in the refrigerator, turning occasionally to distribute marinade evenly.
Using a slotted spoon, remove vegetables from marinade.
On a large serving platter arrange marinated vegetables on greens.
Drizzle some of the remaining marinade over vegetables.
