Ingredients
| 1 medium head broccoli, cut into florets | ||
| Carrots | 2 Medium, sliced | |
| Onion | 1 Medium, chopped | |
| Green bell pepper | 1 Medium, sliced | |
| Celery stick | 1 , chopped | |
| Apple | 1 Large, cubed | |
| Cottage cheese | 250 Gram, cubed | |
| Salt | 1/2 Teaspoon (Dressing) | |
| Ground black pepper | 1/2 Teaspoon (Dressing) | |
| Dried thyme | 1/4 Teaspoon (Dressing) | |
| Dried basil | 1/4 Teaspoon (Dressing) | |
| Dried marjoram | 1/4 Teaspoon (Dressing) | |
| Prepared mustard | 1 Teaspoon (Dressing) | |
| Egg | 1 (Dressing) | |
| Garlic | 2 Clove (5gm), chopped (Dressing) | |
| 1 tsp any non-synthetic vinegar | ||
| 3 tbsp curd made from fat-free milk, whisked | ||
| Oil | 2 Tablespoon (Dressing) | |
| Sunflower seeds | 1 Tablespoon (Garnish) | |
Directions
Combine all vegetables, apple and paneer in a large bowl and toss well to mix.
Place all ingredients for dressing except curd and oil in a blender and blend till well mixed.
Whisk curd with 2 tbsp water.
With the machine running, slowly pour in oil and then curd, and continue blending till smooth.
Roast sunflower seeds in a dry pan till light gold.
Just before serving, sprinkle a little dressing over salad, toss to mix and garnish with sunflower seeds.
Serve at room temperature with remaining dressing in a small bowl.
