Party Date Cake Recipe
My longing for party date cake strengthened during high school days. Even though party date cake is a dessert I enjoy snacking on it any time of the day. You will definitely come back and thank me for sharing this party date cake recipe.
Ingredients
Topping
1/3 cup sugar
1/3 cup chopped walnuts
1/3 cup semi-sweet chocolate pieces
Cake
1 cup chopped pitted dates
1 cup boiling water
1 teaspoon baking soda
1/2 cup (1 stick) butter or margarine
1 cup sugar
2 eggs
1 1/2 cups all purpose flour
1 tablespoon cocoa powder (not a mix)
Directions
1. Make topping: Combine sugar, nuts and chocolate pieces in a small bowl and reserve.
2. Make cake: Mix dates and boiling water in small bowl; cool; add baking soda and stir to combine thoroughly.
3. Beat butter or margarine and sugar until fluffy in medium-size bowl with electric mixer at high speed; add eggs, one at a time, beating well after each addition; turn mixer speed to low.
4. Add flour and cocoa, a third at a time, beating just until blended; stir in date mixture.
5. Pour batter into a greased 9-inch angel cake tube pan; sprinkle with chocolate-nut mixture, lightly pressing topping into batter.
6. Bake in moderate oven (350°) 45 minutes, or until top springs back when lightly touched with fingertip.
7. Cool in pan on wire rack 15 minutes. Loosen around edges and tube with knife; invert onto one wire rack, cover with second wire rack and turn right-side up; cool.
