Directions
1. In small saucepan, evenly sprinkle gelatin over cold water; let stand 2 minutes to soften gelatin slightly. Cook over medium-low heat, stirring constantly, until gelatin has completely dissolved. Remove from heat.
2. Press cottage cheese through sieve into large bowl. Add cream cheese, confectioners' sugar, lemon peel, salt, and gelatin mixture. With mixer at medium speed, beat mixture until smooth; pour into 4-cup mold or bowl. Cover and refrigerate until set, about 4 hours.
3. To unmold, run tip of paring knife around edge and tap side sharply to break seal. Invert onto chilled large plate; remove mold. Arrange fresh fruits around mold. Drizzle with honey, if you like.
