Parsnips A L Espanole Recipe
Ingredients
6 to 8 medium-sized parsnips
1/4 cup (60 mL) water
2 tbsp (30 mL) butter
1 tsp (5 mL) cornstarch
1/4 cup (60 mL) brown sugar
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) pepper
1/4 cup (60 mL) fresh orange juice
Grated rind of 1/2 an orange
Directions
€¢ Wash and peel parsnips as for Parsnips '' Nature.''
€¢ Cut into sticks. Place in a microwave-safe dish. Add the water. Stir well.
€¢ Microwave 6 to 8 minutes at HIGH, stirring after 5 minutes of cooking. Check doneness with the point of a knife.
€¢ When done, remove from microwave and let stand 5 to 8 minutes.
€¢ Place the butter in a microwave-safe bowl and melt 1 minute at HIGH.
€¢ Add the remaining ingredients, stir well. Microwave at HIGH 3 minutes, stirring twice. Drain the cooked parsnips. Pour orange sauce over. Stir well.
€¢ When ready to serve, microwave 3 to 4 minutes at MEDIUM-HIGH, stirring once.
