Ingredients

 4 medium-size parsnips
 Salt1 Teaspoon
 Water to cover
 Egg yolk1
 1 egg white, slightly beaten
 1 cup soft whole wheat bread crumbs
 Oil1 Tablespoon
 Butter2 Tablespoon

Directions

Peel and dice parsnips and cook in salted water approximately 20 minutes or until tender.
Mash thoroughly and add egg yolk.
Form into patties, dip in egg white, then roll in crumbs and saute in oil and butter until crisp and golden brown.
