Ingredients

 Tomatoes2 Cup (16 tbs), sliced
 Celery1 Cup (16 tbs), sliced
 1/4 cup chopped fresh parsley or 1 tablespoon parsley flakes
 1/2 cup wine vinegar or cider vinegar
 Salt1/2 Teaspoon
 1/4 teaspoon Italian seasoning or crushed oregano, if desired

Directions

Combine all ingredients; toss lightly.
Chill, covered, at least 2 hours.
Drain extra liquid.
