Parsley Chicken And Ham Pâté Recipe
Ingredients
| 225 g/8 oz lean, skinless chicken, cooked | ||
| 100 g/3 '1/2 oz lean ham, trimmed | ||
| Small bunch fresh parsley | ||
| Lime rind | 1 Teaspoon, grated | |
| Lime juice | 2 Tablespoon | |
| Garlic | 1 Clove (5gm), peeled | |
| Natural yogurt | 125 Milliliter | |
| 1 tsp lime zest, to garnish | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
1. Dice the chicken and ham and place in a blender or food processor. Add the parsley, lime rind and juice, and garlic and process well until finely minced. Alternatively, finely chop the chicken, ham, parsley and garlic and place in a bowl. Mix-gently with the lime rind and juice.
2. Transfer the mixture to a bowl and mix in the fromage frais (yogurt). Season with salt and pepper to taste, cover and leave to chill in the refrigerator for about 30 minutes.
3. Transfer the pate to individual serving dishes and garnish with lime zest.
4. Serve the parsleyed chicken and ham pates with lime wedges and crisp bread.
