Parsley And Pepper Rice Recipe
Ingredients
2 eggs
1/2 cup melted butter or margarine
1/4 cup chopped green pepper
1/4 cup chopped fresh parsley
1 clove garlic, minced
1 small onion, chopped
2 cups hot cooked rice
1 1/2 cups sharp Cheddar cheese
1 scant cup evaporated milk
Salt and pepper
Directions
In a large mixing bowl, beat together the eggs and butter or margarine.
Add the remaining ingredients, seasoning to taste with salt and pepper.
Transfer to a lightly greased 2quart casserole.
Bake in a 350° F.
Oven for 45 minutes or until firm.
