Parsley Stuffed Artichokes Recipe

Parsley Stuffed Artichokes is a delicious side dish recipe that is simply easy-to-prepare. Once you have this recipe, I am sure you will always crave for it.

Ingredients

 
6 medium artichokes
 
3 cups chopped parsley
 
1 clove garlic, finely chopped
 
1 teaspoon salt
 
1/8 teaspoon freshly ground black pepper
 
Juice of 1/2 lemon
 
Lemon wedges
 
1 tablespoon olive oil

Directions

1. Prepare the artichokes for stuffing Preheat oven to moderate (350° F.).
2. Combine the parsley, garlic, salt and pepper and pack into the center of each artichoke. Arrange the artichokes in a baking dish just large enough to accommodate them snugly, or tie each with a string to retain the shape.
3. To the dish add boiling water to the depth of one inch. Add the lemon juice and oil. Cover and bake thirty to forty-five minutes. Cool to room temperature before serving.
