Parsley Sauce Recipe

Ingredients
1 tbsp (15 ml) butter
2 tbsp (30 ml) chopped parsley
1 tsp (5 ml) oregano
1 tbsp (15 ml) tarragon
2 shallots, chopped
2 tbsp (50 ml) wine vinegar
1/2 cup (125 ml) dry white wine
1 1/2 cups (375 ml) hot chicken stock
1 tbsp (15 ml) cornstarch
3 tbsp (45 ml) cold water

Directions
Heat butter in deep frying pan.
Cook parsley, oregano, tarragon and shallots 2 minutes over medium heat; season well.
Pour in vinegar and cook 1 minute over high heat.
Add wine; cook 3 to 4 minutes over high heat.
Pour in chicken stock, bring to boil and continue cooking 3 to 4 minutes.
Correct seasoning.
Mix cornstarch with water; stir into sauce and cook 2 to 3 minutes.
