Traditional Parsley Sauce Recipe
Ingredients
| Parsley | 1 Bunch (100gm) | |
| 1 pinch powdered mace | ||
| Milk | 1 1/2 Cup (16 tbs) | |
| Butter | 3 Tablespoon | |
| 1 1/2 cups strained chicken and ham soup | ||
| Flour | 3 Tablespoon | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Scald the parsley in the milk and soup with the pinch of mace.
Melt the butter, add the flour, and cook for 1 minute.
Strain the boiling liquid, add gradually to the flour and butter mixture to make a smooth sauce.
Cook for 10 minutes.
Chop the scalded parsley very finely and add to the sauce.
Season.
This is a traditional sauce that is slightly green in color.
The parsley is a bright emerald.
