Parsi Soothanoo ( Dried Ginger Sweet ) Recipe

400 gms. sugar
100 gms. dried, powdered dill or suva seeds
25 gms. dried, powdered ginger
10 gms. khaskhas or poppy seeds
1 teaspoon rice flour
1 teaspoon cardamom seeds - crushed pure ghee
Directions
1. Grease an aluminium tray with one tablespoon ghee and set aside.
2. Make a thick syrup with 4 cups of water and the sugar. Squeeze a tablespoon of sour lime juice in the hot syrup. With a perforated spoon remove the scum which will surface over the syrup and drain it through a damp muslin cloth into another clean vessel. Add all the ingredients into the thick syrup and stir the mixture non-stop over a low flame. When it thickens pour it into the greased tray and level it with a spatula. Cut lines into the sweet and when cool break it into pieces.
