Parsi Poro ( Parsi Omelettes ) Recipe

Ingredients

 
6 eggs
 
2 small onions finely chopped or a packet of chives
 
3 tablespoons fresh coriander, finely chopped
 
1 tablespoon mint, finely chopped
 
3 green chillies, deseeded and finely chopped
 
1/2 teaspoon ginger-garlic paste
 
1/2 teaspoon turmeric powder
 
1/2 teaspoon pepper powder
 
1 teaspoon chilli powder
 
1 green mango finely chopped when in season, salt to taste, ghee

Directions

1. Take a round bowl and crack six large eggs into it. Add all the ingredients including salt to taste and mix well.
2. Take an iron tava or skillet and put a quarter cup of oil in it. Allow it to heat well, stir the mixture and pour one-fourth of it on the skillet. Allow the underside to become golden brown and then flip it over and cook it over medium heat. If the heat is too intense when you pour the egg mixture the omelette will burn and turn out raw.
3. Make four omelettes out of this mixture and serve them with chips, sour lime and buttered toast.
