Ingredients

 
2 cups boiling water
 
2 cups diced potatoes
 
1/2 cup sliced carrots
 
1/2 cup sliced celery
 
1/4 cup chopped onion
 
Salt and pepper to taste
 
1/4 cup (1/2 stick) margarine
 
1/4 cup flour
 
2 cups milk
 
1 cup (4 ounces) grated Parmesan cheese
 
1 (7ounce) can cream-style corn

Directions

Combine the boiling water, potatoes, carrots, celery, onion, salt and pepper in a kettle over medium heat.
Simmer, uncovered, for 10 minutes or until vegetables are tender.
Do not drain.
Melt the margarine over medium-low heat in a small saucepan.
Whisk in the flour, then the milk.
Cook until thickened, whisking constantly.
Add the Parmesan cheese and heat until melted, stirring constantly.
Stir the flour mixture and corn into the undrained vegetables.
Heat to serving temperature; do not boil.
