Parmesan Sauce Recipe

Ingredients
3 egg yolks
1/2 cup sour cream
1/2 cup hot melted butter
1/4 cup freshly grated Parmesan cheese
1 tablespoon lime juice
Salt and white pepper, to taste
Directions
Place egg yolks and sour cream in a heavy saucepan.
Using a wire whisk the whole time, stir until yolks and sour cream are well combined.
Place the pan over a very low heat, stir, and cook yolks and cream 3 to 4 minutes until warmed through.
Very slowly, drizzle in the melted butter, whisking the entire time, until all butter is added and sauce is very smooth.
Begin adding the grated cheese, 1 tablespoon at a time, waiting until each tablespoon is well dissolved before adding the next.
Add the lime juice, and salt and pepper to taste.
Let sauce cook a few minutes longer, stirring occasionally.
Set sauce to the side, or cover and refrigerate until needed.
