Directions
1. Pat fish dry. Combine flour, paprika and black pepper to taste. Combine breadcrumbs and Parmesan cheese. Coat fillets with flour mixture. Dip in egg, then coat with breadcrumb mixture. Heat oil in a frying pan over a medium heat, add fillets and cook for 2-3 minutes each side or until cooked.
2. To make Lemon Thyme Butter, heat butter, lemon rind, lemon juice and thyme in a saucepan over a medium heat for 1 minute or until butter melts. Serve with fish fillets.
