Parmesan Chicken Breasts Recipe

2 whole chicken breasts, about 1 lb. each
 
1/2 cup buttermilk
 
1/2 cup roasted and ground garbanzo sprouts
 
1/2 cup toasted wheat germ
 
3/4 cup grated Parmesan cheese
 
Salt to taste
 
Freshly-ground pepper
 
4-6 tbsp. butter or margarine
 
4 lemon slices
 
2 tbsp. chopped parsley

Directions

Cut breasts in half.
Skin and bone each half.
Put buttermilk in shallow dish.
Combine sprouts, wheat germ, cheese and seasonings in another shallow dish.
Dip raw chicken breasts first in buttermilk, then in sprout mixture, covering completely.
Refrigerate for 1 hour.
Heat butter in large skillet.
Saute breasts, turning frequently, until done through and brown on all sides.
Garnish with lemon slices and chopped parsley.
