Ingredients
3 small galia or cantaloupe melons, halved and seeded
75 g/3 oz Parma ham, cut into thin strips
100 g/4 oz Mozzarella, cut into small dice
12 cherry tomatoes, halved
12 basil leaves, torn
Olive oil
White wine vinegar
Freshly ground black pepper
TO GARNISH:
6 small sprigs of basil
Directions
Scoop out the melon using a melon bailer or cut into cubes.
Mix with the ham, cheese, tomatoes and torn basil leaves.
Spoon into the melon shells and pack in an airtight container.
Chill.
When about to serve, transfer the melon halves to small bowls.
Drizzle with oil and vinegar and add a good grinding of black pepper.
Garnish each with a small sprig of basil and serve.
Mix with the ham, cheese, tomatoes and torn basil leaves.
