Parkin Recipe

These crispy and crunchy parkins make the perfect snack for any time of the day. Simple and easy to make, try your variations of the recipe.

Ingredients

 
1/4-lb. Scots medium oatmeal
 
2 oz. butter
 
1/4-lb. flour
 
3 oz. sugar
 
pinch salt
 
almonds — whole
 
2 oz. black treacle
 
2-tspn. each: ground cinnamon and groundginger
 
1/4 tspn, mixed peel
 
1/4-tspn. Bi-carb.

Directions

Sift the flour and rub in butter.
Mix in all dry ingredients and mix to a firm dough with treacle.
Divide into pieces the size of a walnut and place on a greased pan.
Flatten into rounds and place half a skinned almond on top.
Bake in a moderate oven until crisp for about 25 minutes.
