Park Doughnuts Recipe
Ingredients
3 eggs, separated
3/4 cup granulated sugar replacement
4 1/2 cup all-purpose flour
5 tsp baking powder
1 1/2 tsp salt
1 cup skim milk
1 tsp nutmeg
3 tsp vegetable oil
Vegetable oil for frying
Directions
In a bowl, beat the egg whites until stiff and dry.
Beat the yolks into the egg whites, one at a time, until lemon colored.
Gradually beat in the sugar replacement.
In another bowl, sift flour, baking powder, and salt together twice.
Add flour mixture alternately with the skim milk to the egg mixture, beating well after each addition.
Add the nutmeg and the 3 T. (45 mL) oil.
Turn out onto a lightly floured surface.
Roll until 1/4 in. (1.3 cm) thick and cut with doughnut cutter.
Heat frying oil to 375°F (190°C).
Drop in a few doughnuts at a time.
Fry until puffed and golden brown.
Remove with a slotted spoon and drain on paper towels.
