Parisian Pepper Steak Recipe

Ingredients
Sirloin steak, cut 2 in. thick; allow about 3/4 Ib. for each serving
1 1/2 to 2 tablespoons peppercorns, crushed
Shortening or drippings
Salt
3 tablespoons butter or margarine
2 tablespoons chopped shallots
2 small glasses brandy
Broth or bouillon
1 dash Worcestershire sauce
1 dash tomato ketchup
Directions
Press coarsely crushed peppercorns into both sides of steak, so that the pepper clings to the meat.
Heat several tablespoons shortening in a large heavy skillet; add steak and cook over high heat about 3 minutes, turning once.
Season to taste with salt.
Add butter and shallot to skillet and cook until meat is well browned.
Flambe steak with brandy and arrange on a preheated platter.
Pour a small amount of broth or bouillon into skillet and add Worcestershire sauce; bring to boiling.
Cook and stir for several minutes.
Mix in ketchup.
