Directions
GETTING READY
1 In a large bowl, sift the flours together.
2 Rub in butter with fingertips.
3 Stir in water with a knife and mix to a firm dough.
4 Turn out onto a floured board and knead until smooth.
5 Cover and let stand for 10 minutes.
MAKING
6 Divide dough into six equal portions.
7 Roll each section into a circle approximately 1/2 inch (1 cm) in diameter.
8 In another bowl, combine the filling ingredients.
9 Place a spoonful of filling in the center of each circle.
10 Roll into a ball.
11 Flatten with a rolling pin into 4 inch (10 cm) circles.
12 In a shallow frying pan, heat oil.
13 Fry the flattened balls on both sides until golden.
SERVING
14 Serve hot accompanied with curd or pickle.
