Ingredients
Shredded lettuce heart
2 raw Pacific prawns
1 small clove garlic
1 thin slice fresh ginger root
Pinch pepper
1/2 teaspoon sesame oil
1/2 teaspoon ginger sherry
Salt to taste
Pinch Ve-Tsin
1/2 egg white
Good pinch cornflour
1 tablespoon canned bamboo shoots
Peanut oil
Directions
Cut the lettuce into thin strips and place them on a serving dish.
After removing the black intestinal lines, finely chop the prawns.
Add the finely chopped garlic and ginger and then the pepper, sesame oil, sherry, salt, Ve-Tsin, egg white and cornflour.
Mix very well together with the finger tips.
Finally, add the finely chopped bamboo shots.
Have ready six 6-inch squares of greaseproof paper, each rubbed with a little peanut oil.
Place one-sixth of the mixture towards one corner of each.
Fold over this corner and then the two sides and tuck in the remaining flap.

It should rise but not bounce up.
Lower the 'packets' into it and cook for 5 minutes when they will be beautifully brown.
