|Shredded lettuce heart||1 Cup (16 tbs)|

|Ginger sherry||1⁄2 Teaspoon|
|Canned bamboo shoots||1 Tablespoon|

After removing the black intestinal lines, finely chop the prawns.
Add the finely chopped garlic and ginger and then the pepper, sesame oil, sherry, salt, Ve-Tsin, egg white and cornflour.
Mix very well together with the finger tips.
Finally, add the finely chopped bamboo shots.
Have ready six 6-inch squares of greaseproof paper, each rubbed with a little peanut oil.
Place one-sixth of the mixture towards one corner of each.
Fold over this corner and then the two sides and tuck in the remaining flap.
Heat enough peanut oil for deep frying.
Test by dropping a piece of potato into it.
It should rise but not bounce up.
Lower the 'packets' into it and cook for 5 minutes when they will be beautifully brown.
Place on the bed of lettuce.
Unwrap each 'packet' and eat from the paper.
