Papaya Salad & Laotian Chicken Recipe Video

This wonderful baked chicken (Gai) Laotian style and Papaya Salad is very much the same as across the Mekong River in Isan, Thailand (Som Tom). Note the small covered basket in the video-this contains the traditional sticky rice that is always eaten with this chicken and papaya salad. So good, but after eating it you want to take a nap as it is very heavy.

Recipe Story

I have this same type of clay mortar and teak pestle. I think mine is larger but it is simply the best you can have and a must for making curry pastes and as here for Papaya Salad. Papaya is made from the green papapya and is healthy and low calorie. This is the perfect salad hot-sour-sweet-salty. Texture is crunch and wonderful! Chickens in Laos and Thailand are tall and skinny compared to those in the US. Note Chef Kai is using a US fat bird.

Ingredients
