Papaya Yogurt Ice Recipe

Ingredients

 
2 large papayas
 
3 tablespoons fresh lime juice
 
1 teaspoon vanilla
 
2 eggs, separated
 
3/4 cup sugar
 
Pinch of salt
 
2 1/2 cups plain yogurt
 
Papaya halves
 
Burnished Coconut
 
Lime wedges (garnish)

Directions

Peel and seed papayas and cut meat into chunks.
Whirl in blender or processor until papaya is pureed (about 2 cups puree).
Add lime juice and vanilla.
Combine egg yolks, 1/4 cup sugar and salt.
Beat with electric mixer on high speed until yolks are light and lemon colored.
Stir in papaya mixture.
Add 1/4 cup sugar.
Beat sugar into mixture until it dissolves.
Stir in yogurt.
In large bowl, beat egg whites until soft peaks form.
Slowly pour in remaining 1/4 cup sugar and continue beating until stiff and glossy.
Fold papaya mixture into egg whites, stirring just until blended.
Freeze in ice cream maker according to manufacturer's instructions, or freeze in ice cube trays, stirring occasionally during freezing process.
When mixture is frozen, spoon into fresh papaya halves, top with sprinkle of Burnished Coconut and garnish with lime wedges.
