Papaya Pickle Recipe
Ingredients
| 500 gms. raw papaya, skinned, deseeded and cut into 1/2" cubes | ||
| Green chillies | 8 | |
| 4" amba halad, cut into fine strips | ||
| Garlic | 12 Tablespoon, skinned | |
| 3 tbsps. green peppercorns | ||
| Turmeric | 3 inch, cut into strips | |
| Juice of 20 sour limes | ||
| Cornflour | 3 Teaspoon | |
| Water | 1/2 Cup (16 tbs) | |
| Rock Salt | To Taste | |
Directions
Place the Papaya, amba-halad, garlic, turmeric, ginger and 2 cups of water in a pan over very low heat. Sprinkle rock salt and allow to cook till all the water evaporates.
Mix in the green peppercorns.
Mix water and cornflour, stir into the pickle and replace the whole over low heat till you get a smooth thick texture to the pickle. Taste for salt. Add the lime juice, mix and remove from the fire. Cool. Bottle and refrigerate.
This pickle is very good for health.
