| Shallot | 1 Tablespoon, chopped | |
| Orange rind | 1 Tablespoon, grated | |
| Liquid red-pepper seasoning | ||
| Peanut oil | 1/2 Cup (16 tbs) | |
| Strained pan juices | ||
Directions
1. Place the diced papaya in a mixing bowl. Add the orange and lime juices, the red wine vinegar, water, shallot, grated orange rind and a few drops of red-pepper seasoning. Whisk vigorously until blended.
2. Add the peanut oil and mix vigorously until well blended and the mixture thickens slightly. Stir in the strained pan juices.
3. Sprinkle with sprigs of fresh cilantro, if you wish, before ladling the dressing over the Papaya-Chicken Salad.
