Papaya Chutney Recipe
Ingredients
| Brown sugar - 8 cups packed | ||
| Vinegar | 2 Cup (16 tbs) | |
| Papayas - 2 medium, ripe but not soft | ||
| Chinese bananas - 6, cut in 1/4-inch slices | ||
| Seedless raisins package | 1 | |
| Pineapple | 1 Can (10oz), crushed | |
| Macadamia nuts | 1 Cup (16 tbs), blanched | |
| Garlic | 6 Clove (5gm) | |
| Ginger root | 1 pound | |
| Red chili peppers - 4 tablespoons | ||
| Salt | 4 Tablespoon | |
| Cloves | 2 Teaspoon | |
| Allspice | 1 Teaspoon | |
Directions
MAKING
1) In a large saucepot put brown sugar and vinegar.
2) Bring to boil and boil for 10 minutes.
3) Mix remaining ingredients, stirring constantly and boil until brown and thickened.
SERVING
4) Put into sterilized jars immediately and seal with melted paraffin.
