Papaya Biscuits Recipe
Ingredients
| 225 g -8 oz butter | ||
| 175 g - 6 oz caster sugar | ||
| Egg | 1 , beaten | |
| 175 g - 6 oz plain flour | ||
| Baking powder | 2 Teaspoon | |
| 115 g - 4 oz wholemeal flour | ||
| 175 g - 6 oz dried, chopped papaya | ||
| 175 g - 6 oz sweetened shredded coconut | ||
| Limes | 2 | |
Directions
Using an electric blender beat together the butter and sugar until soft and light.
Beat in the egg gradually then fold in the sifted plain flour and baking powder.
Grate the rind of the limes and add to the mixture with the remaining ingredients.
Roll the dough into small walnut sized balls with floured hands.
Place on lightly greased baking sheets and allow enough space between them, as they will spread out.
Bake in a preheated oven for 15 minutes until golden.
Cool slightly before transferring to a cooling tray.
