Papaya Ala Meringue Recipe
Ingredients
3 egg whites
1 cup sugar
1/2 tsp. vinegar
1 large papaya
1/4 tsp. almond extract
Juice of 1/2 lime
Dash salt
Directions
Combine egg whites, vinegar, almond extract and salt in mixing bowl, beat until mixture forms stiff peaks.
Add sugar gradually and continue beating until very stiff.
Line cookie sheet with plain ungreased paper.
Divide meringue into six mounds on paper and form into cups with spoon.
Bake in slow oven, 300°F.for 45 minutes.
Remove from paper immediately and cool.
Peel papaya with potato peeler, cut in half and scoop out seeds.
Cut into bite-size cubes or make into balls.
Squeeze over lime juice, chill.
Just before serving, fill meringue shells with papaya, a dollop of almond flavored whipped cream may be added.
