Papaitan Recipe Video

Papaitan is a famous Ilocano soup dish mostly composed of cow or goat innards. The name of this dish was derived from the Filipino word “Pait”, which means “bitter”. The bitter taste of this soup comes from the bile. This is a bitter juice extracted by the liver and stored in the gallbladder to aid digestion.

Directions

GETTING READY
1. Pour in water in a cooking pot and boil with salt.
2. Put-in the ox tripe and small intestines and simmer until tender.
3. Turn off heat. Remove ox tripe and small intestines and slice.

MAKING
4. In a cooking pot heat oil.
5. Sauté garlic, onion, and ginger.
6. Add beef, heart, sliced intestines, and tripe.Cook for about 3 to 4 minutes.
7. Sprinkle salt and ground black pepper, stir for a minute.
8. Pour-in remaining water, bring to a boil. Simmer for 40 minutes.
9. Add bile, simmer for 5 minutes.
10. Add finger chilies and squeeze-in the lemon juice, simmer for 3 minutes.

SERVING
11. Transfer to a serving bowl and serve hot.
