Take 6 measures of soji,
 
One measure of maida,
 
One measure of wheat flour,
 
A little salt to taste
 
Water and
 
Cooking oil

How to make Pani Puri

Simple making of Puri for Pani Puri. Take 6 measures of soji, one measure of maida, one measure of wheat flour, a little salt to taste and make a thick dough with water. Allow to set for about half an hour. Then make out a large roti, cut with a cup / lid cap into small disks as shown and deep fry in cooking oil.. cool it for sometimes up to 5 to 6 hrs in the open and then crack one face of the puri ( it will remain crisp ) stuff with a potato curry, fill with a tamarind chutney and
EAT !

use soda water instead of water.......it will come out crispy.......and u can keep it in airtight jar for long period too..

You make it look easy, maybe I can make it instead of buying the poori, but I hate to deep fry. Once in awhile I think it is OK for health if you use healthy oil as you do.
