Directions

Use 1 pound fresh or frozen smelts.
Thaw if frozen.
Rinse and wipe dry.
Dip in 1/4 cup milk, then in a mixture of 1/2 cup cornmeal and 1/2 teaspoon salt.
In large skillet cook smelts in 1/4 cup butter till done, about 5 minutes on each side.
Sprinkle 2 tablespoons snipped parsley over fish; serve with lemon.
