2 pounds fish fillets, steaks or pan-dressed fish
1 teaspoon salt
1/8 teaspoon pepper
1 egg
1 tablespoon water
1 cup all-purpose flour, buttermilk baking mix, cornmeal or grated Parmesan cheese
Shortening (part butter)

How to make Panfried Fish

If fillets are large, cut into serving pieces.
Season both sides of fish with salt and pepper.
Blend egg and water.
Dip fish into egg, then coat with flour.
Heat shortening (1/8 inch) in skillet.
Turning fish carefully to brown both sides, cook in shortening over medium heat about 10 minutes.
