Pan Fried Fish Recipe

Directions
Use 2 pounds fresh or frozen fish fillets, steaks, or pan-dressed fish.
Thaw frozen fish.
Cut fillets or steaks into 6 portions.
Combine 1 beaten egg and 2 tablespoons water.
Mix 3/4 cup fine saltine cracker crumbs or 3/4 cup cornmeal with 1/2 tea spoon salt and dash pepper.
Dip fish into egg mixture; then roll in crumbs.
Heat small amount of shortening in skillet; add fish in single layer.
Fry at moderate heat till browned on one side, 4 to 5 minutes.
Turn and brown other side till fish flakes easily when tested with a fork, about 4 to 5 minutes longer.
Drain on paper toweling.
Makes 6 servings for fillets and steaks; 4 servings for pan-dressed fish.
