Paneer Mattar Roll Recipe
Paneer mutter roll or paneer matar roll is a roll made with long thin paneer or cottage cheese slices filled with mashed green peas. Marinated with hung curd and soy beam oil, the cottage cheese slices are stuffed with peas and spices mix and microwaved with a topping of mustard and ketchup sauce.
Ingredients
400 gm paneer
For the marinade
50 gm hung curd, whisked
10 ml soy bean oil
For the stuffing
100 gm green peas, boiled in minimal water
10 gm cumin powder
10 gm green chillies, chopped
5 gm red chilli powder
5 gm mint, chopped
5 gm coriander
black salt to taste
5 gm garlic paste
For the topping
10 gm mustard paste
100 gm tomato ketchup
15 ml cream
Directions
Cut the paneer into thin long slices.
Mix the marinade ingredients together.
Pour over the cottage cheese and leave to marinate.
Mash the green peas and mix with the remaining ingredients to form a paste.
Keep aside to cool.
Apply the paste on the paneer slices and roll up gently, ensuring that the slices do not break.
Mix the topping ingredients together.
Top the paneer with the sauce and microwave for 1 minute 30 seconds.
Garnish with sliced tomatoes and onions.
