Paneer Aur Pudina Ka Paratha Recipe
Paneer and pudhine ka paratha is a whole wheat flatbread cooked with cottage cheese and mint leaves filling. The dough is flavored with coriander, onions, lemon juice, and green chiles and cooked on a non stick pan.This is a special low sugar recipe great for diabetics as well as for people on low carb diet. Ingredients
| Whole wheat flour | 2 Cup (16 tbs) (For the parathas) | |
| Milk fat | 1 Cup (16 tbs) (For the parathas) | |
| Salt | 1 Teaspoon (For the parathas) | |
| Cottage cheese | 2 Cup (16 tbs) (For the filling) | |
| Mint | 1 Cup (16 tbs), chopped (For the filling) | |
| Coriander | 1/2 Cup (16 tbs), chopped (For the filling) | |
| Onions | 1/4 Cup (16 tbs), sliced (For the filling) | |
| Lemon juice | 1 Teaspoon (For the filling) | |
| Green chillies | 3 , chopped (For the filling) | |
| Salt | To Taste (For the filling) | |
| Other ingredients | ||
| 2 teaspoons oil for cookina | ||
Directions
For the parathas mix all the ingredients and make a soft dough adding water if required.
Divide into 8 equal portions and roll out small thin oblong parathas.
Cook on a tava (griddle) till brown spots appear.
Keep aside For the filling
Combine coriander, mint, onions, lemon juice, sugar, green chillies and salt with enough water and grind to make green chutney.
Mix together this chutney and paneer.
Divide into 8 portions and keep aside.
How to proceed put a little stuffing in the centre of each paratha and close like an envelope.
Cook on a non stick pan on both sides with a little oil until golden brown.
Repeat for the remaining parathas and filling to make 7 more parathas.
Serve hot.
